My Little Persian Spice Blend – Advieh

Hello lovely readers. I had a bit of a kitchen disaster a few weeks ago and I completely ran out Advieh! This is possibly the worst thing I can imagine running out of at this moment in time. Not least because Autumn has arrived and the fact that all I want to eat is huge bowls of khorest whilst wearing PJs and slippers (the uniform of the working from home community!)

I only really discovered this spice blend around 5 years ago and I now cannot be without it and without exaggeration I think I use it in around 70% of my meals during any given week. Advieh is akin to Garam Masala and Baharat in Persian cooking in that it is a spice blend that differs by household used in a variety of dishes in Persian cooking. I particularly love it with lamb , dry or in a khorest (Persian stew). Either works well for me.

My last batch came as a present from my uncle following his trip to Iran and it is by far and away my favourite version. He said there were literally 100’s of different blends of Advieh and colour choices in the Bazaars which is amazing considering that every version I have bought online or in a Middle Eastern food market in the UK has just 4 ingredients , Cinnamon, Rose, Cumin and Cardamom.

The one he gave me has 24 different spices in but alas doesn’t actually give me the exact quantities of each! I have scoured the internet and found nothing that comes close even fractionally. So I decided to make my own and surprisingly I love the flavour of it and the depth and variety of taste that comes through. Advieh

Ingredients

1/2 tsp of ground Saffron

1 tsp ground Chilli Powder

1/2 tsp Black Pepper

1 tsp Ground coriander

1 tsp Ground cumin

1/2 tsp Ground Fenugreek

1 tsp Cinnamon

1 tsp Garlic Powder

1/2 tsp Nutmeg

1 tsp ground Rose

1 tsp Dried lemon

1 tsp Ground ginger

1/2 tsp Ground fennel

2 tsp Turmeric

Blitz all of the ingredients in a small grinder and store in an airtight container. Should keep for 3 months.
